Frequently Asked Question
Where does your lovely fish come from?
Our fish is handpicked by the best merchants from across the UK who supply the high standard that Chipwick demands. We prioritise serving excellent quality food above all else and so therefore we specify in using large fish that has been caught in deep, cold waters and we insist that every piece is from a sustainable stock.
Fishing grounds change throughout the seasons so we ensure that we cast our net far and wide in order to always provide our customers with generous-sized fish of the best calibre.
How often do you change your cooking oil?
At Chipwick your fish is cooked in fresh oil every single day! It is expensive but it makes all the difference and here’s why: with fresh oil you can cook at a much higher temperature and this then seals the batter on contact so that the oil drawn into the fish is greatly reduced. At lower cooking temperatures the fish consumes far more oil.
What happens to the waste oil?
Our used cooking oil is converted into biodiesel which is then used to power the trucks that collect depleted oil from other shops.
What cooking oil do you use?
We fry in fresh rapeseed oil every day which has been chosen for its neutral taste. After all, we want you to taste the fish! In addition to this it is the far better option health-wise compared to oils used by other restaurants, due to the fact that it contains the least saturated fat.
Where do your potatoes come from?
Our potatoes mainly come from Cambridge. Our local merchant is based in Burgess Hill and he has been supplying us for over 30 years now. He searches for exemplary potatoes of the perfect size and appropriately low sugar level in order to enable Chipwick to make and provide our customers with the best chips!
